First Off - Don't Overthink It

Pick a Protein

Just start with your go-to cut of pork. (Pork = shoulder, ribs, belly, or tenderloin)

Season well

Season from 6-8 inches above the protein for even coverage. Don't go overboard.

Cook to the correct temp

Extremely important - don't overcook it. Great seasoning cannot fix an overcooked piece of meat.
Pork = 145°
Pulled pork = 200-203°

Quick Pork Cooks

Pork Chops

  1. Pat dry, season with Spellbound rub
  2. Cook over medium-high heat
  3. Pull at 140–145°
  4. Rest 5 minutes

Pork Tenderloin

  1. Season all sides evenly with Spellbound rub
  2. Cook over medium heat (grill or oven)
  3. Pull at 140–145°
  4. Rest 5–10 minutes with butter before slicing

Easy Pulled Pork

  1. Season pork shoulder heavily with Spellbound rub
  2. Cook low & slow at 250° (roughly 9 hours)
  3. When internal temperature reaches 185° pull wrap in butcher paper or foil and place back on the smoker.
  4. Cook until internal hits 200–205°
  5. Rest for at least an hour in a cool oven or Cooler, then shred in a bowl with (1 cup apple cider vinegar and 1/2 cup brown sugar) and finish with Kinda Sweet BBQ Sauce

Pork Tips to Remember

Cook to Temp, Not “Until It Looks Done”

Use a meat thermometer inserted into the thickest part of the meat, away from bone. Check temperature in multiple spots to ensure even doneness throughout.

Long Cooks = LONG REST

The longer your cook, the longer your rest. A pork shoulder that's been smoking for 12+ hours needs at least 30-45 minutes wrapped in foil and a towel to let the juices redistribute. Pork chops and tenderloin 5 - 10 minutes.
