Itsa Vinegar Sauce

unseasoned, non-spiral sliced, smoked or raw ham

Directions
Preheat smoker to 250°F.
Dry the ham as best you can with paper towels. Score the outer layer of the ham and use yellow mustard as a binder(use your preferred binder if you wish). Season generously with Sweet Heat or Apple Pie rub.
Smoke ham for 3-4 hours or until the internal temp reaches 165°F.
Place ham in a baking dish or disposable tray. Add in ½ cup of Itsa Vinegar sauce and ½ a stick of butter to the tray. Coat the ham with the Caramel Peach spread from the Ham Kit, then cover with foil and smoke or bake at 350°F until the ham reaches at least 200°F internal temperature.
Let ham rest covered for at least 30 minutes, up to 2 hours. Shred and serve!
