Smothered pork chops with onions and mushrooms is a classic dish that showcases the versatility and rich flavors of pork. Lane’s Signature Rub

Bear and Burton’s W Sauce

thick cut pork chops, bone-in or boneless

2 cloves garlic, chopped finely

1 medium sweet onion, thinly sliced

16oz package of baby bella mushrooms, sliced

2 tbsp unsalted butter
Directions
Preheat grill/smoker to 400 degrees(medium-high heat)
Add a cast iron or grill safe pan and saute the garlic, onions, and mushrooms in butter for 5-10 minutes until softened. You can do this on the stove if you are not able to on the grill.
Once vegetables are softened, season with 1-2 tsp of Signature rub and add in 2 tbsp of W sauce. Simmer and reduce until a “jammy” consistency. Keep warm until chops are done.
Season the pork chops generously with Signature rub. To save cooking time, you can butterfly the chops.
Grill over direct heat until internal temperature reached 145 degrees F. Let chops rest for 5-10 minutes then smother them with your onion and mushroom sauce.
