Smothered Pork Chops
Smothered pork chops with onions and mushrooms is a classic dish that showcases the versatility and rich flavors of pork. The succulent, juicy pork chops are first seasoned generously with our favorite savory rub Signature. Then, they are expertly grilled to achieve a smoky char that gives the dish its distinct flavor profile. The sweetness of the caramelized onions perfectly complements the earthiness of the sautéed mushrooms, adding depth and richness to every bite. This flavorful combination creates a harmonious balance on the palate. The smothering technique involves simmering the cooked pork chops in a luscious sauce made from pan drippings, broth, and seasonings until they become irresistibly tender and infused with robust flavors. These smothered grilled pork chops with onions and mushrooms are an exquisite example of how simple ingredients can be elevated into an exquisite dining experience through expert preparation techniques.
Lane’s Signature Rub
Bear and Burton’s W Sauce
thick cut pork chops, bone-in or boneless
2 cloves garlic, chopped finely
1 medium sweet onion, thinly sliced
16oz package of baby bella mushrooms, sliced
2 tbsp unsalted butter
Preheat grill/smoker to 400 degrees(medium-high heat)
Add a cast iron or grill safe pan and saute the garlic, onions, and mushrooms in butter for 5-10 minutes until softened. You can do this on the stove if you are not able to on the grill.
Once vegetables are softened, season with 1-2 tsp of Signature rub and add in 2 tbsp of W sauce. Simmer and reduce until a “jammy” consistency. Keep warm until chops are done.
Season the pork chops generously with Signature rub. To save cooking time, you can butterfly the chops.
Grill over direct heat until internal temperature reached 145 degrees F. Let chops rest for 5-10 minutes then smother them with your onion and mushroom sauce.
