Directions
Setup grill for indirect cooking. Set temperature to 275 Degrees
Remove membrane from ribs (optional, but our preference) Season both sides with Lane’s Hot Honey Rub and let sit at room temperature for around 15 to 30 minutes.
Place ribs meat side up on rack for around 2 hours or until the internal temp is around 165.
In a sauce pot - add 1 cup Lil Spicy, ¼ cup Mike’s hot honey, ¼ cup Pow Pow, and 1 tbsp Hoy Honey Seasoning. Bring to a very light simmer
Prepare your foil boat (2 large sheet foil in the shape of an +) pour around a ½ cup of the sauce in a line the size of the ribs. Once ribs reach 165 place the ribs meat side down in the sauce and wrap in foil. Place back on smoker meat side down for 1 hour or until internal temp reaches 202
Remove from grill, take out of the foil, brush ribs with sauce mixture and put back on the grill for about an 15 minutes (meat side up). This will allow the sauce to set. If you pick them up with tongs on the end the rack should bend.
