Smoked BBQ chicken mac and cheese is a decadent and flavorful dish that combines the comfort of creamy mac and cheese with the smoky undertones of perfectly barbecued chicken. This dish starts with al dente macaroni noodles, cooked to perfection, then tossed in a rich and velvety cheese sauce made with a combination of sharp cheddar, Gouda, and smoked provolone. The star ingredient, however, is the succulent smoked BBQ chicken. The chicken is slow-cooked over hardwood smoke until it becomes tender and juicy, infused with a delicious smokiness that adds depth to every bite. Finally, this savory masterpiece is baked in the oven until golden brown on top, enhancing its richness and adding a delightful crunch. The result is an irresistible fusion of flavors - the creamy cheesiness of the mac and cheese complemented by the smoky tang of BBQ chicken - making this dish an indulgent treat for any barbecue or comfort food enthusiast alike.

6-8 boneless and skinless chicken thighs

1lb of pasta (we used medium shells)

3 12oz cans of evaporated milk

16oz Velveeta cheese

8oz Monterey Jack cheese, shredded

8oz Pepper Jack cheese, shredded

8oz Cheddar or Colby cheese, shredded

2 cups fried onions(optional)
Directions
Preheat grill/oven/smoker to 350°F
In an aluminum tray or 9x13 baking dish, place the velveeta block in the middle of the tray and spread the pasta noodles evenly around. Pour the evaporated milk in. It should just cover the pasta.
Spread half of your shredded cheese over the top and season generously with SPG. Place on grill covered for 30 minutes.
While the mac is cooking, season the chicken with Spellbound hot and grill until internal temp reaches 165°F. Brush chicken with Lil Spicy sauce and grill for an additional 10 minutes. Let rest for 10 minutes then chop into bite sized pieces.
After 30 minutes, uncover pasta and stir to combine all ingredients. Continue to cook uncovered, stirring every 10-15 minutes until the pasta is at your preferred doneness. It should take 45 minutes to 1 hr total cook time.
Once the pasta is at your preferred doneness, top the mac and cheese with the chicken, the remaining shredded cheese, fried onions, and a little sprinkle of Spellbound Hot.
Place back on grill for 10 minutes to melt the cheese, then rest for 15-20 minutes. Add some extra sauce to the top before serving!
Recipe Note
- Any chicken would work instead of thighs, and could be substituted with smoked sausage as well.
- Fried onions make a great crunchy topping, but you can also use breadcrumbs or crushed crackers.
- Use any combo of cheeses you like!
