Ingredients

2 Poblano Peppers

Monterey Jack Cheese

Torilla Strips

1.5lb Ground Beef (will make 4 patties)

Fiesta Rub
-
4 Slices of Applewood Smoked Bacon
-
Avocado Slices
-
½ cup Mayonnaise
-
2tsp Blackening Rub
-
2tsp Chili Lime Rub
-
2tsp Lime Juice
-
Pinch of Salt
Smokey Chili Lime Mayo
Directions
Mix up 1/2 cup mayonnaise, Blackening Rub, Chili Lime Rub, Lime Juice, and salt in a side container for the Smokey Chili Lime Mayo - let sit a couple of hours (I like to let sit for the flavors to break down, this is just recommended)
Roast poblano over flame, bag for 10 minutes (steam), cut off the top with stem, slice and remove seeds, peel or scrape clear film off outside of the poblano (IMPORTANT)
Slice poblano the size of the patty
Cook 4 slices of bacon and chop into half-inch bits
Make patties seasoned with Fiesta Rub and Cook how you like
Before pulling the burgers add poblano and Monterey Jack Cheese to melt
Add Smokey Chili Lime Mayo to the bun, bacon, avocado slices, tortilla strips, and the burger with poblano and melted cheese.
