Pizza stuffed chicken is a quick and easy meal that is sure to please both adults and children alike. Ingredients

Lane’s Garlic² Rub
boneless, skinless chicken breast
sliced pepperoni
fresh mozzarella, sliced
tomato sauce or puree
fresh basil, finely chopped

Directions

Preheat grill/smoker/oven to 350 degrees.
In a small bowl, mix your tomato sauce, fresh basil, and Garlic² rub to make your quick marinara sauce.
Butterfly a chicken breast, then add a layer of your sauce on the inside of the chicken breast. Add 3-5 slices of pepperoni, then add the mozzarella on top. Fold chicken breast back over to close. You may use twine to hold it closed if needed.
Season the outside of the chicken breast liberally with Garlic² rub and place on your preheated grill for 25-45 minutes until internal temp reaches 165 degrees.
Rest for 10 minutes and serve.

Recipe Note

You can use premade sauce or sun dried tomato pesto for this
Serve over some spaghetti or along side your favorite pasta dish
Use whatever toppings and cheese you like, and pizza toppings would be great with this method
