Have you ever wanted lasagna, but weren't feeling the Italian vibe. This is a great Mexican lasagna that will cure that itch. Sometimes called taco lasagna this is our take on a classic. that might become a staple in your weekly dinner meal calendar. Pulled pork with peppers, onions, cheese...you cannot go wrong here. Easy and quick! Garnish with fresh sliced avocado or make simple guacamole with chips on the side. Your family will love you for this one.
Ingredients

3 Cups Chicken Stock

1/4 cup Lane's Cubano Rub

1/4 cup Lane's Chili Lime Rub

1 Jalapeno (seeded)

8 Guajillo Peppers (seeded)

4 Ancho Peppers (seeded)

1 Bay Leaf

3 Garlic Cloves

1 Bunch Cilantro

1 Yellow Onion (Sliced Thin)

1 Tbsp Oil

1 1/2 cups Yellow Onion (diced)

1 Zucchini (diced)
-
1 Yellow Squash (diced)

1.5 Cups Corn Kernels

1.5 Cups Black Beans (cooked)

1/2 Tbsp Cumin

1/4 Tsp Oregano
-
1 Tbsp Lane's Cubano Rub

2 Cups Pulled Pork
-
8oz Shredded Cheese
-
1/2 Jalapeno

12 each - Soft 6 inch Tortillas (replaces Noodles)

Avocado

Cilantro

Cojita Cheese (or Queso Fresco)

Directions
Maria Sauce
Combine all in a sauce pot except for the sliced onions. Simmer for 1 hour.
Blend mixture in a food processor then return to the pot, add the sliced onions and reduce for another 30 minutes. Reserve for building the lasagna.
Mexican Lasagna
Stabilize your Smoker to a temperature of 450F and place your hickory chunk in the hottest section of coals so it combusts, and we get clean blue smoke.
Add oil to a large skillet, once it comes to temperature. Add the zucchini, squash, onions, and saute them in the pan for a few minutes.
Once the onions, zucchini, and squash are softened add corn, beans, cumin, oregano, and 1 tbsp Lanes BBQ Cubano. Cook together for a few minutes.
Add the pulled pork and cook together for a few minutes to make sure all of the ingredients are cook together and mixed but the squash and zucchini are still a bit firm. Remove from the pan and reserve, wipe out the skillet to prepare it for building the lasagna. (or use a separate skillet)
Now for building the lasagna. 1st place a layer of tortillas covering the bottom on the pan. Next Spoon a layer of meat and vegetable mixture on top of the tortillas (at least ¼inch thick) then top with a layer of Maria sauce and then a layer of cheese. Repeat this process 2 more times for a 3-layer lasagna.
Place the pan on the grill and close the dome. Cook for 10 minutes to allow all of the ingredients to melt together and for the smoke to work a bit of magic!
Remove from the grill top with garnish and enjoy! (Optional Garnish, Avocado, Cilantro, Cojita Cheese, and Lane's One Legged Chicken Buffalo Sauce)
Recipe Note
- Reminder for my Kitchen Cooks, all of this can be cooked in an oven and on the stovetop.
- If you do not have pulled pork you can use ground beef instead. You can always kick up the heat level by adding more seasoning and leaving the seeds in the peppers.
- if you are unsure about the zucchini and squash you can take them out, but you will be surprised at how much you like them if you leave them in.
