White Cheddar and Bacon Corn Dip
Dip / Appetizer
4 tbsp Butter
3 ears sweet white corn
3 ears sweet yellow corn
Lane's Sweet-Lic Rub
2 tbsp All-purpose flour
1 1/2 Cup Milk
6 oz Cream Cheese
8 slices of bacon
1 small yellow onion
2 cups Shredded White Cheddar
1 cup Sharp Cheddar
Cook bacon, seasoned with Sweet-lic rub, to your crispiness and place to the side. Once cooled chop.
Preheat oven/smoker to 350
Chop onion and sauté with 4 tbsp butter in a Large Cast Iron skillet over medium heat
Cut kernels off yellow and white corn and add to skillet. Season with 2 tbsp Lane's Sweet-Lic Seasoning
Cook for a minute. Add flour and mix thoroughly, no clumps. Add milk and bring to a simmer.
Once simmering add cream cheese, white cheddar, and half the chopped bacon,. Then Mix.
Top with Sharp Cheddar, season with Sweet-lic rub, and place in oven/smoker. Cook about 20 minutes.
Remove - top with the rest of the bacon, sprinkle with Parmesan cheese and enjoy.
