Cook the bacon, seasoned with Sweet-lic rub, to your desired crispiness and place to the side. Once the bacon has cooled then chop.
Chop your onion and sauté with 4 tbsp butter in a Large Cast Iron skillet over medium heat. Cut the kernels off yellow and white corn and then add those to the skillet. Season with 2 tbsp Lane's Sweet-Lic Seasoning.
While cooking, add flour and mix thoroughly, making sure there are no clumps. Add your milk and bring to a simmer. When simmering add cream cheese, white cheddar, and half the chopped bacon. Then stir!
Top with Sharp Cheddar, season with Sweet-lic rub, and place in oven/smoker. Cook for about 20 minutes.
Remove, garnish with the rest of your bacon, sprinkle with Parmesan cheese, and enjoy!
This Corn dip is like a hybrid between corn chowder and a cheese dip. Both on their own are independently good and substantial, but together, you better hold on to something because these flavors will knock you off your feet! So, it just made sense to us to combine the two and create a dip that is to die for. Use a chip or bread, doesn't really matter you'll just want this dip in your mouth.
