Preheat oven to 400 degrees.
Slice chicken breast into strips (Fajita style) and place in a large bowl. Slice bell peppers and onions into strips. Put into the bowl with the chicken. Drizzle 2 tablespoons of avocado oil over the ingredients in the bowl and mix. Season the ingredients with Fiesta Rub mix and pour evenly over a large sheet pan.
Place in oven at 400 degrees for 25 minutes. The internal temp of the chicken should be 160 to 165.

2 yellow Onions
Tortillas - your favorite or a healthy grain free option (Siete tortillas)
