The combination of tangy BBQ sauce, juicy grilled chicken, and sweet pineapple chunks all melted together with gooey mozzarella cheese is simply divine. Add to that the delicious chewy crust which is slightly charred in all the right places and you have a slice of heaven on your plate. What makes this pizza even better is the way it's cooked to perfection in your smoker or on the grill. Every bite is a mouth-watering fusion of tropical paradise meets American classic comfort food - and it's utterly irresistible!

Ingredients

Lane’s Pineapple Chipotle Sauce

Lane’s Island Dust Rub

1 lb pizza dough, homemade or store bought

10-12oz shredded chicken, leftover or freshly prepared

½ medium red onion, thinly sliced
-
1 cup or sliced or chopped fresh pineapple
-
2 cups of shredded mozzarella, low-moisture preferred
-
fresh parsley, chopped(optional)
Directions
Preheat grill or smoker to 450-500 degrees, or highest temp it will go.
Stretch dough out over a well greased ½ sheet pan or 12 inch pizza pan.
Spread a thin layer of Pineapple Chipotle sauce over the dough, then top with the shredded chicken.
Add your cheese, onions, and pineapples. Finally, top with a generous shake of Kapalua rub before cooking.
Place the pizza on your smoker/grill and cook for 10-15 minutes or until the crust is lightly charred and the cheese is melted and bubbly. You can cook directly on a pizza stone if you have one.
Top pizza with chopped fresh parsley and let rest for 10 minutes, then slice and enjoy!
Recipe Note
- Grill your pineapple before adding to he pizza for some extra flavor!
- Add in some fresh or pickled jalapenos for some extra heat.
