Ingredients

One Legged Chicken Buffalo Sauce

Lane’s Signature Rub

3-4 large green tomatoes
-
1 quart of buttermilk

1-2lbs of cornmeal
-
vegetable or corn oil
Directions
Slice tomatoes into ¼” to ½” thick discs and soak in a mixture of buttermilk and One Legged Chicken sauce for 30 minutes up to 2 hours in the refrigerator.
In a large bowl, mix together cornmeal and ¼ cup Signature Rub. Take tomato slices directly from the buttermilk mixture and coat them thoroughly in the cornmeal breading.
In oil preheated to 350°F, fry the tomatoes for 4-5 minutes, flipping occasionally until the coating is golden brown. Allow to drain on a cooling rack and cool for a few minutes before serving.
Enjoy on their own with some Sorta White sauce, or on a classic BLT!
Recipe Note
- Rubs like Cubano, Spellbound Hot, and Garlic2 are great to use in place of Signature.
- These make an awesome topping for burgers!
