This dish has all of the crispy goodness you'd expect from waffles mixed with juicy, succulent chicken in a sweet, creamy casserole. It's easy to make, yet still packed with tons of flavor thanks to the Lane's Maple Pecan Rub added to the mix. Plus, it's one that everyone in the family can agree on—kids love it just as much as adults do. It's an ideal entrée for special occasions like brunch or dinner parties and can be easily customized according to personal tastes. Not only is this Fried Chicken and Waffles Casserole truly drool-worthy, but it also takes only minutes to throw together, making it an effortless go-to meal!
Ingredients

2 Tablespoons Signature Rub

1-2 lbs of boneless and skinless chicken cut into 1 inch bites

1 1/2 cups all purpose flour

2 eggs, beaten

½ cup of buttermilk

2 cups vegetable or peanut oil

1 Tablespoon vanilla extract

Maple Pecan Rub
-
1 cup honey
-
4 eggs
-
1 cup milk
-
10 frozen fully cooked waffles, cut into bite sized pieces

Directions
Fried Chicken Bites
Mix flour and Signature Rub together in a bowl. Mix eggs, buttermilk, and 1 Tbls One Legged Chicken sauce(or more to taste) in a separate bowl.
Heat 2 inches of oil in a large pot over medium heat. Approx. 350 degrees F
Dredge chicken pieces in flour mixture, and shake off excess. Dip into egg mixture, then lift up so excess egg drips back into the bowl. Press into flour mixture again to coat.
Lower chicken pieces carefully into hot oil in batches; fry until golden brown, 5-7 minutes. Transfer to a paper towel-lined plate to drain. Repeat with remaining chicken pieces.
Casserole
Preheat grill/smoker/oven to 375 degrees F
Mix honey, vanilla and 1 Tbls of Maple Pecan rub in small bowl. Reserve 1/2 of the spiced vanilla honey mixture for serving. Place eggs and milk in large bowl. Add remaining honey mixture and mix together.
Place chicken and waffle pieces in bottom of lightly greased 13x9-inch baking dish. Pour egg mixture over top, tossing to coat. Let stand 15 minutes to allow chicken and waffles to absorb egg mixture.
Season top generously with Maple Pecan rub and cover with foil. Bake 20 minutes, then remove foil. Bake 25 to 30 minutes longer or until eggs are set and top is crispy. Serve with reserved vanilla honey drizzled over top.
Recipe Note
- Maple syrup is fantastic to drizzle on before eating!
- Make this more of a dessert by serving with a scoop of Butter Pecan ice cream.
- Any kind of frozen waffle will work with this recipe, so let your creativity run wild!
