My husband and I make cowboy caviar every week. We don’t use tomatoes and it last longer. ewe use pinto beans and 3/4 cup of sugar apple cider vinegar and extra virgin olive oil. heat to a boil for 1 minute and after it cools completely we pour it over the beans and papers. We use whole chopped peppers. Yellow ,red and green. No Jalapeno because we don’t do hot
