Hot Honey Chicken Tacos with Peach Salsa

Ingredients

Lane's Fiesta Rub

Savannah Bee Co - Hot Honey
3-4 Chicken breasts
2 Peaches
Half red onion
2 limes
3 medium/small tomatoes
Half a bunch of Cilantro
1 jalapeno
Pack of flour Street Taco tortillas
Queso Fresco/Cotija Cheese
Directions
Making the Peach Salsa
Dice and place in a large bowl - Peaches, Half red onion, Tomatoes, and Jalapeño (you can leave the jalapeño out if you don't like the heat)
Add finely chopped cilantro, 1 tbsp Hot Honey, and squeeze 2 limes into the bowl. Mix and refrigerate.
Making the Tacos
Chop 3-4 chicken breast into small 1 inch chunks or strips and place in a bowl. Add 1tbsp olive oil and Season with Lane's Fiesta Rub. Mix and add more seasoning if needed.
In a skillet cook the chicken on med until internal temperature of 165. Drain any liquid from the skillet.
Add skillet back to the heat and squeeze 1-2 tbsp of Savannah Bee Co Hot Honey over chicken. Mix and cook until the honey has fully incorporated. Should start to caramelize a bit. Remove from heat.
Make your tacos - Tortilla, Chicken, Peach salsa, and a crumble of Cotija/Queso Fresco and enjoy.
