Lane’s Chili Lime rub

Lane’s Fiesta rub

1 32oz bag of frozen tater tots

14-20oz steak(skirt, flank, or fajita cut)

shredded monterey jack and cheddar cheese

1 bunch of fresh cilantro
-
juice of 2 limes
-
pickled red onions
-
sliced jalapenos
-
fresh guacamole
-
sour cream or mexican style crema
Directions
Marinate steak in lime juice, cilantro, Chili Lime rub, and optionally a beer. Marinate, refrigerated, for at least 30 minutes, up to 8 hours.
Prepare the tots according to package directions. We fried them, but they can be cooked in the oven, air fryer, or smoker. Coat tots in Fiesta seasoning after cooked,
Remove steak from marinade, letting excess liquid drain off. Coat the steak generously in Fiesta rub and grill or smoke to desired doneness. We cooked to medium rare(125 degrees internal). Rest and chop steak into bite sized pieces.
In a large cast iron pan or disposable aluminum pan, arrange a layer of tots, then covered with half of the shredded cheese and half of the steak. Repeat this process one more time, then smoke or grill for 5-10 minutes to melt the cheese.
Top with remaining ingredients(pickled onions, jalapenos, guac, salsa, sour cream/crema, cilantro) and a final sprinkle of Chili Lime rub.
Recipe Note
- This can easily be done with chicken, shrimp, or any protein!
- Top how you like, and experiment with salsas and different cheeses.
- This recipe works with any kind of fry or tot variety.
