Prep
Preheat oven to 350 degrees.
Season your Chicken breast with Lane's Fiesta Rub and cook for 40 minutes. (internal temperature should be 165) Allow chicken to cool and shred. Cook bacon and chop.
Cook
In a Crockpot or Large pot on the stove add chicken and bacon. Add 2 tbsp Lane's Cubano Rub. Add the black beans, corn, and ROTEL to the pot. Cook on low for 45 minutes covered. Check and stir every now and then.
Garnish, Serve, and Enjoy!!

Not to be confused with white bean chicken chili, this recipe is just white chicken chili. Chicken chili is becoming more popular and this recipe is too easy not to try. Make it as spicy as you want or not...your choice!

Directions
Season Chicken with Lane's Fiesta Rub and bake at 350 for about 40 minutes (depending on the thickness) Chickens internal temperature should be 165.
Shred Chicken
Cook bacon and chop - Optional you can season bacon with Lane's Fiesta Rub
In a Crockpot or Large pot on the stove add chicken and bacon
Add 2 tbsp Lane's Cubano Rub
Add the rest of the ingredients to the pot and Cook with lid on low for 45 minutes - Check and stir a every now and then.
Make a bowl add your garnish and enjoy
Recipe Note
**Alternately, you can use raw chicken with all the ingredients in a Crockpot and cook for 6 hours on low.
**You can use white beans if you would like.
**You can garnish how you like.
