Season your Chicken breast with Lane's Fiesta Rub and cook for 40 minutes. (internal temperature should be 165) Allow chicken to cool and shred. Cook bacon and chop.

In a Crockpot or Large pot on the stove add chicken and bacon. Add 2 tbsp Lane's Cubano Rub. Add the black beans, corn, and ROTEL to the pot. Cook on low for 45 minutes covered. Check and stir every now and then.
Not to be confused with white bean chicken chili, this recipe is just white chicken chili. Chicken chili is becoming more popular and this recipe is too easy not to try. Make it as spicy as you want or not...your choice!
