Ingredients
-
Cubano Rub
-
Southbound Sauce
-

-
6 oz sliced deli ham
-
6 slices of swiss cheese
-
thin cut pickle slices, any variety
-
yellow or deli mustard
Directions
Preheat grill/smoker to 275 degrees F.
Using a meat mallet, pound out each pork chop to 1/8” thick or as thin as you can go with out the pork chop falling apart.
Spread a thin layer of mustard on one side of each chop, then layer ham, cheese, and pickle on top of the mustard.
Roll each chop as tightly as possible and then wrap with 1-2 slices of bacon until completely covered. Season with Cubano Rub to taste.
Grill for 30-45 minutes, or until internal temp reaches 135 degrees F. Brush each roll with Southbound Sauce and cook for an additional 10-15 minutes or until internal temp has reached at least 145 degrees.
Let rest for 5-10 minutes. Serve with additional Southbound Sauce or your favorite mustard for dipping.

Hey Larry, you would need to set the oven temp to 375. It should take about 20-25 minutes, but the internal temp should still reach 135 before being done.

If I had to put them in the oven, what temperature would I set it to? and, set it to bake, yes?
Thanks,
Larry

Gonna have to try this and add the Cubano rub to my collection. If you like spicy brown mustard my fave is Lusty Monk out of NC. Loving your Rectec too btw! Thanks for sharing!
