Smoked Bacon Wrapped Chicken Stuffed with Poppers

Ingredients
Lane's Spellbound Rub
3 Jalapeños
2 Large Chicken Breast
Pack of Bacon
4 oz Cream Cheese
4 oz Thick Shredded Cheddar Cheese
(Optional) Lane's Kinda Sweet Sauce
Directions
Cut tops off the Jalapeños, slice long ways, and remove insides
Mix cream cheese, shredded cheddar, and 2 tsp Spellbound Rub
Fill insides of Jalapeños and set to the side
Slice chicken from the side but do not cut all the way through
Open and place 2 - 3 Jalapeño Poppers inside the chicken (however many can fit and be able to close the chicken)
Lightly season the outside of the chicken with Spellbound rub
Wrap chicken with bacon (should be about 4 to 5 slices) You shouldn't have a need for toothpicks
Lightly season the bacon wrapped chicken with Spellbound
Smoke at 265 degrees (indirect heat) - should take about an hour or until internal temperature reaches about 160 - Be careful how you temp the chicken, it can be a little tricky with the poppers in the center of the chicken. Use your favorite wood for chicken we used cherrywood.
(Optional) Once your chicken reaches temp or slightly below temp (155) you can brush Lane's Kinda Sweet Sauce over the top and place back on the grill for 5 to 10 minutes
