Cut tops off the Jalapeños, slice long ways, and remove insides. Mix cream cheese, shredded cheddar, and 2 tsp Spellbound Rub. Fill Jalapeños and set to the side.
Slice chicken from the side, but do not cut all the way through. Open and place 2 - 3 Jalapeño Poppers inside the chicken, then close. Lightly season the outside of the chicken with Spellbound rub. Wrap chicken with bacon. (should be about 4 to 5 slices) Lightly season the bacon-wrapped chicken with Spellbound.

Smoke at 265 degrees. (indirect heat) Internal temperature should reach 160. Be careful how you temp the chicken, it can be a little tricky with the poppers in the center of the chicken. (Use your favorite wood for chicken we used cherrywood.)
(Optional) Once your chicken reaches temp or slightly below temp (155) you can brush Lane's Kinda Sweet Sauce over the top and place it back on the grill for 5 to 10 minutes.
If you are not a fan of Cordon Bleu then this recipe will change your mind. We took out the broccoli and ham to put our own twist on things. We put in Jalapeno poppers and wrapped it all in bacon. This is the best cheesy mess you are going to want to eat. It has a kick, but you can always add more if necessary.

The heat level depends on your Jalapeños. But honestly, this isn't that spicy. You can always spice it up by adding One Legged Chicken as a dipping suace.
