Pimento Cheese Stuffed Sweet Meatballs

Setup grill/smoker - on grill place chunks/coals on one side - heat to around 275-300
In a bowl add ground beef, diced jalapeños, egg, panko breadcrumbs, and 2 tbsp Lane’s Chili Lime Rub
Mix all together and make meatballs about 2 inches diameter - push thumb in the middle of the meatball and pull out to create a bowl shape.
Add a scoop of your favorite pimento cheese and close the meatball around the pimento cheese
Season the outside of the meatballs with Chili Lime Rub
Optional place a handful of cherry chips over chunks/coals when you are ready to place meatballs on.
Place meatballs on the side of the grill without the coals for indirect firing. If using a ceramic just place the meatballs on grate.
Cook for about 30-45 minutes or until internal temp reaches 150
Brush Lane's Kinda sweet BBQ sauce on meatballs and cook for another 10 minutes until internal temp reaches 155
