2 tbsp Maple Pecan Rub

1/4 cup Carolina Mustard BBQ Sauce

4 salmon fillets (6 oz each)

1/4 cup maple syrup

1/2 cup pecans, finely chopped

1 tbsp fresh parsley, chopped (for garnish)
Directions
Add Maple Syrup, Carolina Mustard, 1 tbsp Maple Pecan Rub, and Salmon to a sealed bag. Softly massage ingredients together and place in fridge for an hour.
After salmon has marinated - Preheat your smoker/oven to 375°F (190°C).
Remove salmon from bag and season with Maple Pecan Rub evenly over the fillets, massaging it gently into the fish.
Spoon finely chopped pecans evenly over each salmon fillet, making sure to cover the entire surface. Drizzle over the pecan covered salmon with the marinade mixture.
Smoke/Bake the salmon for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Once the salmon is cooked, remove it from the oven and let it rest for a couple of minutes. Add fresh parsley for garnish.
Serve immediately with your choice of sides, such as roasted vegetables or a fresh salad.
Recipe Note
For an extra crunch, toast the chopped pecans in a dry skillet over medium heat for 3-4 minutes before using them.
Feel free to substitute the salmon with other fish like trout or chicken for a different twist.
Serve with a side of grilled asparagus or quinoa for a balanced meal.
Alternately you can just make a mixture of pecans, syrup, seasoning, and Carolina mustard bbq sauce and evenly distribute over the salmon and cook.
