Cubano Chicken Salad Sliders

Ingredients
2 Chicken Breast
Lane's Cubano Rub
1 cup Mayonnaise
4 Eggs
1 tbsp Lemon juice
Optional - Onion, Pickles, Tomato, or Dill Relish
Directions
Pre-heat oven to 350
Season both sides of chicken breast with Lane's Cubano Rub and cook for about 45 minutes (depends on the chicken thickness - be sure internal temp is at 165)
Bring water in a pot to a boil and boil 4 eggs for 11 minutes - remove and cool
When chicken is done remove and let cool at room temp
Chop chicken and place in a large bowl (Chop or shred chicken - your preference)
Remove shell and dice eggs and place in bowl
Add mayonnaise, lemon juice, and 1 - 2 tbsp Cubano Rub (add Cubano to taste)
Mix and place in refrigerator for 4 hours (You can add diced onion and dill relish if you like or you can add onion and pickles when you are making your slider)
Create your sliders using slider buns or Hawaiian rolls (Add tomato, onion, pickles, lettuce, and extra mayo if desired)
Recipe Note
For best results brine chicken with Lane's Signature Brine for at least 8 hours
