Stuffed with a combination of apples, mushrooms, onions and goat cheese, pork loin is a delicious dish that delights the palate with its complex flavors and tender texture. The pork loin serves as the perfect canvas for the contrasting yet harmonious flavors of the ingredients. Ingredients

Lane’s Spellbound rub

3-4lb boneless pork loin roast

2 granny smith apples, peeled and diced

6oz bacon, chopped

½ medium onion, diced

8oz mushrooms, diced

4oz goat cheese, or any soft and spreadable cheese

2-3 cloves garlic, chopped fine
Directions
Preheat grill/smoker to 275°F
Brown the bacon in a cast iron pan or skillet, then remove and set the bacon aside. Leave about 2 Tbsp of bacon grease in your skillet, then saute the mushrooms, onions, apples, and garlic seasoned with 1-2 Tbsp of Spellbound rub. Cook until the apples are softened and browned.
Butterfly the pork loin by slicing into the middle lengthwise, but not cutting all the way through. It should open up like a book. Then using a meat mallet or heavy blunt object, pound and flatten out the pork roast until even all the way across.
Season both side of the pork roast generously with Spellbound rub.
Spread a thin layer of the cheese evenly across the inside of the roast, then a layer of the filling mixture.
Roll the pork roast up and tuck in any filling that starts to come out. Secure the roll with a few pieces of butcher’s twine.
Smoke the roast for 45 minutes - 1 hour or until the internal temperature reaches at least 145 degrees.
Once done, let the pork rest for 15-20 minutes before slicing and serving.
Recipe Note
- Cream cheese and Boursin cheese are great alternatives for the goat cheese
- Use Spellbound Hot for an extra kick of spice!

I tried this tonight, it was great. I swapped a few ingredients, carrots for mushrooms, and I used marscapone in the stead of goat cheese. Smoked it with apple wood, it was very good the pork came out tender and the flavors mixed well.
