These White Chicken Enchiladas are the kind of easy, cheesy comfort food that brings everyone to the table. Made with simple ingredients and a creamy homemade sauce, they’re perfect for a laid-back family dinner or a cozy get-together with friends. Just roll, bake, and enjoy!

Ingredients

Fiesta Seasoning

Chili Lime Seasoning

2-3 Chicken Breast

1 pack (8-10 count) of tortillas (9 - 10 inch)

3 tbsp unsalted butter

8oz Sour Cream

2 ½ tbsp All-purpose Flour

1 cup chicken broth
Directions
Season chicken with Fiesta Seasoning and bake in the oven at 350 until internal temperature is 160 pull and rest. Shred or chop chicken and set aside.
take a tortilla and fill with chicken and wrap. Place fold side down into a 9x13 glass dish. You should be able to fill the dish with 7 - 8 side by side, depending on how you filled them.
**optional - you can add sautéed onion and bell peppers to the chickenIn a skillet add 3 tbsp butter and melt. Once melted add 2 ½ tbsp all-purpose flour and whisk until it starts to thicken.
Add 1 cup chicken broth and whisk until it starts to thicken.
Add 8oz sour cream, 1 tbsp fiesta seasoning, and mix all together.Pour mixture over the chicken tortillas, season the top of the sauce with Chili Lime, and bake in oven at 350 for 25 minutes.
Remove and enjoy
**Optional - top with sliced avocados or/and cilantro
