Lane's BBQ Sweet Heat and Signature Ribs (For RecTec or Ceramic)

Method

(For RecTec)

  1. Set dial on RecTec to 275 degrees. Make sure you have a clean piece of foil covering your heat shield under the grates.
  2. Remove Ribs from package and flip over. Trim up the spare ribs to your preference. Remove membrane from the back side of the ribs. Lightly coat with olive oil. Season front and back of ribs liberally with Lane's Signature & Sweet Heat Rubs.
  3. Let sit at room temperature for around 45 minutes.
  4. Place on grill Meat side up 2 hours at 275. Remove ribs from grill and place in clean pan. Prepare foil boat, add butter, sauce and more seasonings. Place ribs meat side down in the mixture. Wrap tight and place back on the smoker for 1 hour (Meat side down). Remove from grill, take out of the foil, brush ribs with sauce and put back on the grill for about an 1 hour (meat side up). This will allow the sauce to set. If you pick them up with tongs on the end the rack should bend. Total cook time usually around 3 ½ - 4 hours.

(For Ceramic)

  1. Set up Ceramic Cooker for indirect cooking. Get smoker temp to around 275 degrees
  2. Remove Ribs from package and flip over. Remove membrane from the back side of the ribs. Lightly coat with olive oil. Season front and back of ribs liberally with Lane's Signature & Sweet Heat Rubs. Let sit at room temperature for around 45 minutes.
  3. Stir in wood chips, set down Plate setter, the a foil tray filled about half way with water.
  4. Finally put down the cooking grate then place ribs on top (meat side up). Or you can use a v-rack as well. I cook them for about 2 hours at 275 degrees then once the internal temp is around 165. Prepare foil boat, add butter, sauce and more seasonings. Place ribs meat side down in the mixture. Wrap tight and place back on the smoker for 1 hour. Remove from grill, take out of the foil, brush ribs with sauce and put back on the grill for about an 1 hour (meat side up). This will allow the sauce to set.
